1 Lime around 100g
75g Dark Brown Sugar
18g Green Finger Chillies
3g Salt
4g Yellow Mustard Seeds
2g Fenugreek Seeds
1/4 teaspoon Turmeric Powder
1 teaspoon Lemon Juice

Zesty limes, sliced paper-thin and carefully marinated in fiery green chillies, mustard, fenugreek seeds and spices to produce a unique and delicious tasting Lime and Chilli chutney.

Zesty limes, sliced paper-thin married with fiery green chillies, mustard, fenugreek seeds and spices to produce a unique and delicious tasting Lime and Chilli chutney.

Gently dry fry the yellow mustard and fenugreek seeds until fragrant. Remove to a cold plate to cool down

chop the lime into 8 slices (once in half, then halving those pieces again, lengthwise twice) then slice into very thin pieces (they should look like mini lime pizza slices)

Finely slice the chillies

in a bowl combine all the ingredients together stirring thoroughly, cover and refrigerate overnight

after 24 hours, stir thoroughly and transfer to a sterilised jar for the flavour to develop for a week. As with all chutneys the longer you leave it the more flavour will develop

keep refrigerated
