1 large portion Chips

2 tablespoon Vegetable Oil

1 small cut into chunks Brown/White Onion

1 tablespoon Garlic & Ginger Paste

2 teaspoons Tomato Paste

1 teaspoon Coriander Powder

1/2 teaspoon Salt

1 teaspoon Chilli Powder

1/4 teaspoon Turmeric Powder

1/4 teaspoon Chaat Masala

1/4 teaspoon Black Pepper Powder

1 teaspoon Cumin Powder

1/4 teaspoon Garam Masala Powder

1 teaspoon Lemon Juice

For Decoration
-
1/4 cup Fresh/Chopped Coriander

2 sliced Green Chilli
-
1 sliced Finger Chilli - Red
Directions
Packed with flavour these masala fries are the perfect snack time comfort food. Use oven chips for a healthier alternative to deep fried chips and add more or less chillies to make as hot or mild as you like.
Why not top it all off with a big dollop of soured cream or natural yoghurt over the top

Start by deep frying your frozen chips at around 175 Celsius or oven baking for the time stated on the packet |

Whilst the chips are cooking heat the oil on low to medium and add the onion chunks to begin to soften for a couple of minutes |

Add in the Garlic and Ginger paste and allow to fry for 30-60 seconds until the bitterness goes |

Tip in the tomato puree, watered down with about 4 tablespoons of water to allow it to mix easier and again allow to fry for 30-60 seconds |

Add the rest of the spices but leave the fresh chopped coriander and some of the green and red chillies for decoration at the end and fry for about 4-5 minutes until the oil starts to separate |

Turn off the heat, drain the fries, then combine in the pan and stir gently to coat evenly with the masala spices |

Serve with a sprinkle of fresh chopped coriander and the remaining red and green chillies. For an extra treat why not add a few dollops of natural yoghurt or soured cream over the top as well. |
