Rinse the rice with cold water until the water runs clear, soak in clean water for 15 minutes, rinse once more and then drain |

flip the smartswitch to air fry/hob select sear/sauté set to 5 select start/stop to begin cooking add the oil, salt, cumin seeds, cardamom pods, bay leaf, cassia bark, star anise and cloves sauté for 3 minutes stirring occasionally to release their aromas |

add the drained rice and stir through the spices, sautéing for 1 minute add the boiling water and stir gently |

close the lid and flip the smartswitch to rapid cooker select steam set time to 8 minutes select start/stop to begin cooking |

when finished, open the lid and remove the large aromatic spices which should be sitting on top of the rice if you want your rice with colours sprinkle over around 1/16 teaspoon of various food colouring powders leave for 5 minutes with the lid open to allow any residual steam to escape stir through gently to mix the colours and separate the grains then serve, freeze, or cool and refrigerate for up to 2 days |
