Ingredients

2 cups Pilau Rice - Cooked and cooled

2 tablespoons Vegetable Oil

1/2 medium sliced Brown/White Onion

1/2 teaspoon Salt

1/8 teaspoon Turmeric Powder

1/8 teaspoon Coriander Powder

1 very finely sliced Lemon Peel

1.5 tablespoons Lemon Juice

1/4 cup Fresh/Chopped Coriander
Directions
Made using pre-cooked basmati rice this lemon pilau is the perfect accompaniment to any dish. Perfectly flavoured with lemon and spices this goes great with a wrap as well as your favourite curry dish

Heat the oil on high in a non stick, high sided pan and add the finely sliced onions. Fry for a couple of minutes until they just start to brown |

Add the salt, turmeric and cumin powder, stir through and cook for 30 seconds |

add the lemon peel and lemon juice, stir through then add the rice. Cook stirring for 2-3 minutes to ensure the rice is piping hot |

just before removing from the pan add 1/2 of the fresh coriander and stir though and serve topped with the remaining fresh coriander |
