Ingredients

Adjust Servings:
2 tablespoon Vegetable Oil
1 large Brown/White Onion finely slice 2/3 and large chunk the rest
1 tablespoon Tomato Paste concentrated tomato puree in tubes
2 large grated Garlic Cloves or 2 teaspoons of lazy garlic/puree
2 cm grated Ginger (fresh) or 1 teaspoon of lazy ginger/puree
4 Green Finger Chillies chop 2, leave 2 whole
1 teaspoon Fenugreek Leaves (Kasoori Methi)
1 teaspoon Paprika Powder
1 teaspoon Coriander Powder
1/2 teaspoon Chilli Powder
1/2 teaspoon Salt
1/2 teaspoon Cumin Powder
1/2 teaspoon Tandoori Masala Powder
1/2 teaspoon Turmeric Powder
1/4 teaspoon Mustard I use Colman's English Mustard
250ml Water (boiling)
1 Chicken Breast approx. 250g each
1/4 sliced Red Pepper
1/4 sliced Green Pepper
1/2 Sliced Tomato cut in 4
1/4 teaspoon Garam Masala Powder
small handful Fresh/Chopped Coriander

flip the smartswitch to air fry/hob
select sear/sauté
set to 4
select start/stop to begin cooking

add the oil and sliced onions and sauté for 5 minutes stirring occasionally to soften

add the tomato paste, garlic, ginger and chopped green finger chillies, stir and sauté for 3 minutes

add the fenugreek leaves, paprika, coriander, chilli, salt, cumin, tandoori masala powder, turmeric and mustard, stir and sauté for 5 minutes

add the chicken pieces to the bowl and coat in the sauce and sauté for a further 2 minutes

slowly add the boiling water and combine

select start/stop to finish cooking

pull out the legs on the cook & crisp tray, then place the tray in the top position in the pot

place the chunked onion, red and green peppers, remaining whole finger chillies and tomatoes and drizzle over 1 teaspoon of oil

close the lid and flip the smartswitch to rapid cooker
select speedi meals
set the temperature to 200˚c
set time to 10 minutes
select start/stop to begin cooking

when the time is up remove the contents of the tray to a plate and remove the tray using silicone-tipped tongs

add the onions, peppers, chillies and tomatoes back into the sauce, sprinkle over the fresh/chopped coriander and garam masala powder, stir through, and serve

to reduce to a thicker sauce you can sear/sauté with the lid up to allow more water to evaporate for a further 5 minutes

== NOTE== for each additional serving you may need to increase the reduction time by 5 minutes

flip the smartswitch back to air fry/hob
select sear/sauté
set to 5
select start/stop to begin cooking for 5 minutes
