1 portion Egg Noodles (Lucky Boat #2)
100g Meat / Veg / Paneer
1/2 sliced thinly Red Pepper
1/2 medium cut in chunks Brown/White Onion
1 sliced thinly Chopped Carrot
handful Bean Sprouts
2 sliced thinly Spring Onions
Meat Marinade
1 tablespoon Light Soy Sauce
1 teaspoon Sesame Oil
1/2 teaspoon Sugar
Sauce
1/2 tablespoon Light Soy Sauce
1/2 teaspoon Dark Soy Sauce
1 teaspoon Sugar
1 teaspoon Sesame Oil
3 tablespoon Water

Chinese stir-fried noodles with vegetables and meat

I use Lucky boat #2 noodles as they are used in 99% of UK Chineses takeaways and restaurants. They can initially be expensive for a box (Approx £15) as they only come wholesale but this will make about 150 portions.

You could also sell them off in smaller amounts on eBay to recover the cost and maybe make a profit 🙂

Prepare the noodles

Boil the kettle and pour over 1 portion of noodles in a pan
Gently simmer for 4 minutes then turn off the head and allow to sit for 2 minutes.

Drain in a sieve and allow to slightly dry for 5-10 minutes out whilst you sort the rest of the ingredients

Prepare the meat

Thinly slice the meat into a bowl and add the meat marinade of light soy sauce, sesame oil and sugar.

Mix well and allow to marinate whilst you prepare the vegetables.

Prepare the vegetables

Thinly slice the vegetables such as peppers, spring onions and carrot and chunky cut the onions.

Time to cook

Add 1 tablespoon of oil to a wok or pan and allow to heat on high until smoking.

Add the meat and vegetables (except the bean sprouts if using) and stir frequently for 2 minutes

Add the noodles and cook for a further minute

Add the sauce and cook stirring frequently for a further 1 + 1/2 minutes

Add the bean sprouts if using, stir and cook for a further 30 seconds.

Serve and enjoy.
