250g Mango (unripe) around 1 large
1" grated Ginger (Grated)
1 teaspoon Mustard Seeds (Yellow)
75g Sugar
1 diced Chilli (Green)
1/2 teaspoon Chilli (Powder)
1/4 teaspoon Salt
1/4 teaspoon Garam Masala (Powder)
1 teaspoon Vinegar

This fantastic hot, sweet and sour mango chutney is the perfect accompaniment to your favourite meal or simply as a dip with starters such as samosas and pakoras

heat the mangoes and ginger on a medium low heat in a small saucepan stirring occasionally and reduce until the mixture begins to stick slightly

add the sugar and diced green chilli and stir frequently for 8-10 minutes until it becomes thicker and more like jam

add the chilli powder, salt and garam masala and combine well for a further 2 minutes

stir in the vinegar and mix constantly for a further couple of minutes

cool in the refrigerator and serve as an accompaniment with your favourite meal or as a dip with starters such as samosas and pakoras
