250g Mango (unripe)around 1 large

1" grated Ginger (Grated)

1 teaspoon Yellow Mustard Seeds

75g Sugar

1 diced Green Finger Chillies

1/2 teaspoon Chilli Powder

1/4 teaspoon Salt

1/4 teaspoon Garam Masala Powder

1 teaspoon Vinegar
Directions
This fantastic hot, sweet and sour mango chutney is the perfect accompaniment to your favourite meal or simply as a dip with starters such as samosas and pakoras

peal the mangos, and coarsely grate them into pieces then heat them and the ginger on a medium low heat in a small saucepan stirring occasionally and reduce until the mixture begins to stick slightly |

add the sugar and diced green chilli and stir frequently for 8-10 minutes until it becomes thicker and more like jam |

add the chilli powder, salt and garam masala and combine well for a further 2 minutes |

stir in the vinegar and mix constantly for a further couple of minutes |

if you like your mango chutney "bit free" use a stick blender to turn to mush |
