Ingredients

Adjust Servings:
1 cup Rice - Basmati rinsed until clear and soaked for 15 mins
1 Onion (brown/white) large sliced
1/4 cup Oil (Vegetable)
1/2 tsp Cumin (Seeds)
1 Bay Leaf
2 green Cardamom (Pods)
1/4 tsp Salt
1 cup Water

A delicate blend of fried onions make this aromatic dish a great accompaniment to any curry

Basmati rice cooked in caramelized onions

Rinse the rice with cold water until the water runs clear. Keep the rice soaking in the clean water for 15 minutes.

Combine the onions with the oil in a pot and cook over medium heat until golden brown. About 15 minutes.

Place ½ of the onions on a paper towel to drain and puree the other half with a little water until smooth.

Add the cumin seeds, bay leaf and cardamom pods to the pot and cook over medium heat for about 1 minute then place the pureed onions in the pot.

Strain the rice and add to the pot along with the salt and water.

Bring to a boil, stir and cover the pot. Reduce the heat to its lowest setting and cook for 15 minutes.

## DO NOT OPEN THE LID DURING COOKING ##

Add back the remaining fried onions and fluff the rice with a fork and serve.
