Ingredients

1 cup Rice - Basmatirinsed until clear and soaked for 15 mins

1 Brown/White Onionlarge sliced

1/4 cup Vegetable Oil

1/2 teaspoon Cumin Seeds

1 Bay Leaf

2 green Cardamom Pods

1/4 teaspoon Salt

1 cup Water

Rinse the rice with cold water until the water runs clear. Keep the rice soaking in the clean water for 15 minutes. |

Combine the onions with the oil in a pot and cook over medium heat until golden brown. About 15 minutes. |

Place ½ of the onions on a paper towel to drain and puree the other half with a little water until smooth. |

Add the cumin seeds, bay leaf and cardamom pods to the pot and cook over medium heat for about 1 minute then place the pureed onions in the pot. |

Strain the rice and add to the pot along with the salt and water. Bring to a boil, stir and cover the pot. Reduce the heat to its lowest setting and cook for 15 minutes. ## DO NOT OPEN THE LID DURING COOKING ## |

Add back the remaining fried onions and fluff the rice with a fork and serve. |
