3 Onion large
100 ml Oil (Vegetable)
4 inch piece Cassia Bark (Cinnamon Stick)
4 Bay Leaf
1 tbsp Tandoori Masala Powder
1 tsp Cumin (Powder)
1 tsp Turmeric (Powder)
1 tsp Garlic (Paste)
1 tsp All Purpose Seasoning
1 tsp Garam Masala (Powder)
1 tsp Sugar
100 ml Water

Indian onion masala is a flavor packed paste made up of onion, garlic and spices.

Heat the oil, add cassia bark, bay leaves and stir to release the flavour, add the onions

Continue to stir ensure the onion cooks evenly until dark and caramelised but ensure it doesn't burn, this can take about 20 minutes.

Add the garlic, turmeric, all-purpose seasoning, garam masala, cumin, sugar and tandoori masala powder. Mix well and continue to cook for 5-6 minutes

Remove the cassia bark and bay leaves, allow to cool. Add the water then blend until It’s a smooth paste then freeze in 1 tbsp amounts. My friend puts his in ice cube trays and pops them out when needed
